Typically there are relatively small incremental advances in CIP system design and CIP chemistry, but none of the radical advances of the 70s and 80s, such as acidic CIP of fermenters and BBTs. Efficient CIP however presents different challenges.

The town of Ndola situated in the Zambian Copperbelt has seen many transitions over the last 63 years. The town always claimed to be the capital of the Copperbelt, which irked those who live in and regard Kitwe of having that claim to fame. Previously Northern Rhodesia – now the independent Zambia – the country has experienced fluctuating copper prices, population movements and lately the transition from instability to stability as the area is in growth again.

Of all the traditional biotechnology industries, the brewing industry is probably the one that uses enzymes in the most sophisticated ways. The processes involved in brewing beer make exemplary use of the enzymes in cereals and yeast and were largely developed before anyone knew anything about the biochemistry and function of enzymes.

Stone Brewing is a relative newcomer to the Californian brewing scene – dating from just 1996. Yet it is up there in the iconic stakes alongside Anchor Steam and Sierra Nevada both of which have been in the business for a lot longer. Today Stone is the 11th largest US craft brewer by volume producing 148,000bbl in 2011 and 180,000 in 2012. This 22% hike in just twelve months has forced the installation of second 120bbl Rolec brew stream.
