Milling and mashing Part 1: From malt intake to the grist case

Years ago, mashing was a hot and sweaty part of the brewhouse process. A gang of men armed with mashing paddles would cluster around the mash tun full of hot water. The brewer would adjust the temperature so that he could see his face reflected in the water surface. Another gang would then arrive with sacks of milled malt and frantic stirring would ensue. The first worts were run off, more hot water was added and the whole lot was mixed up again. A third stir added the third water, then it was no doubt time to have a beer!

The lantern swayed dangerously, the wick almost snuffed out in the strong blustery wind. Rain was coming down stronger now, the timber-framed houses only barely standing out from the grey and black. The night was punctuated by the sound of hooves, as one of the coaches came to a stop near the old prison, a dark looking brick and stone building, one of the oldest in Breslau.

Chris and Lisa White, the dynamic couple and founders of White Labs were, of course, homebrewers. Their particular homebrew club was seeking higher quality yeast for their ever-growing amateur brewery set-ups – and this simple desire soon transformed into White Labs.

It is reported there are 18 million visitors to England’s Lake District in any given year, and well over 100,000 of them flock to a fairly new development close to its northern edge – the Lakes Distillery, brainchild of Paul Currie who, along with his father Harold, built the Isle of Arran distillery on the west coast of Scotland in the mid-1990s.
