The cutting edge - Inside the modern lauter tun

Allowing rapid and maximum extraction of clear wort from the spent grains, the lauter tun is the workhorse of the world’s brewing industry. Particular design issues are associated with utilising rakes to aid the filtration and an underplate arrangement to avoid sucking the grains down on to the false bottom. The process should be fully automated without the need for any operator intervention. Indeed, at the CUB plant at Yatala (Queensland, Australia) by Briggs, the control room is not even in the brewhouse!

The use of leaf (whole, or natural) hops is becoming more and more popular. On one hand breweries intend to show their commitment to the traditions of the brewing craft and on the other to emphasise the use of natural ingredients and sustainability. To ensure highest product quality while using leaf hops, so-called vacu-packs or hop blocks are often used - characterised by intense compaction from the complete exclusion of air/oxygen.
