Learn about alternative fermentation techniques at the IBD Great Northern Section's next event! This event will be split across 2 venues, Hip Pop and Balance Brewing and Blending.

At Hip Pop we will learn about the history of Kombucha, delve into the production process and trial some new products. Then it is a 10 minutes walk to Balance Brewing & Blending, where co-founders James Horrocks and Will Harris will give insight into the unique production process of Balance's mixed-fermentation beers, followed by a guided tasting session of Balance’s saisons and wild ales. We will also have a bite to eat, complimentary of the Great Northern section.

Speakers:

  • Ryan Mercer, NPD Lead, Hip Pop

  • Elli Leeming, Head of Operations, Hip Pop

  • James Horrocks, co-founder, Balance Brewing and Blending
  • Will Harris, co-founder, Balance Brewing and Blending

James Horrocks and Will Harris met in 2017 at Chorlton Brewing Co. in Manchester and bonded over a love of wild ales and sour beer. That was where the idea of Balance Brewing & Blending began and in 2021 the first barrels were filled. Since then, Balance has gone from 20 ex-red wine barrels to over a 100, as well as opening their own Manchester barrel store and taproom.

After leaving Chorlton, Will worked at Track Brewing Co. and James at Squawk Brewing Co, where they continued to work for the first 18 months of Balance’s existence. Will Harris has MSc in Brewing and Distilling from Herriot Watt University and James Horrocks has a Diploma in Brewing from the IBD.
